The texture of cheese is determined by moisture content, which depends on the pressure with which it is packed as well as the length of time it has been aged. Hard, or firm, cheeses have a low moisture content, giving them a crumbly texture. Hard cheeses are generally aged for months or years and are excellent for grating. Their taste ranges from very mild to sharp and pungent. Hard cheeses include Parmesan, Asiago and Swiss.
