Italy’s famed cheeses have a rich history that dates back over 3,000 years. Ancient Romans were passionate cheese connoisseurs and had a special kitchen, or “caseale”, constructed in their homes specifically for cheese making, aging and storing. Today, cheese continues to play an integral role in Italian dining and is served at nearly every meal: sometimes as its own course or in place of dessert, other times incorporated in a variety of main dishes.
